Delicious new recipe

It's no secret that Cole and I haven't cooked very much since July 13. We've been just a little preoccupied. :) This week we've been trying hard to change that. Monday after work Cole stopped by the grocery store to get stuff for dinner. He made this Cooking Light recipe. It was great and was pretty easy to make too. We paired it with couscous.

Tonight I made a recipe I found in Real Simple. I put sharp Cheddar cheese in the polenta instead of Gruyère. We added a salad, and we had an easy and delicious dinner. I especially love that this recipe has just a few ingredients. That way it's easy to pick up what I need to make it without needing a list.

Hopefully we'll continue this cooking streak. I have found that it's much more satisfying to cook (and do the mandatory cleaning afterward) when we make something new and different. Cleaning up after spaghetti just doesn't sound like much fun, so I'm always on the hunt for new recipes. I've found a few other new ones that I'm planning to try soon. I'll let you know how those turn out.
