Well, that was fun...

Except not at all.

Today has not really gone as expected. First, the termite inspector showed up 30 minutes early and made me late getting Cole's lunch to him. Thankfully Cole is flexible and didn't mind. The inspection went well and was really quick, and then I left to go by Cole's office.

I got there and he wanted me to drive him by his car to put some of his stuff in it. As we were driving through the parking lot, he noticed that my tire sounded strange. We stopped, he checkout out the tire and determined that it was super low and needed to be changed immediately. We originally thought I could make it down the hill to the gas station to put some air in it (and he would ride with me), but before we got out of the parking lot, Cole decided that we just needed to change the tire to be sure I wouldn't damage the actual wheel. Ugh.

So poor Cole changed my tire in his suit in his office parking lot while the sky was threatening rain. He got a little dirt on his work shirt, and I felt terrible about the whole ordeal. I went straight to the service place after leaving Cole's office, and they found a piece of copper (who knows where that came from) in my tire and patched the hole. They were so nice and repaired it for free!

After finishing there, I got to come home and make lots of annoying phone calls about taxes, insurance, etc. Being on hold is sooooooo much fun.


To make up for Cole having to change my tire in his suit, I made special parmesan-pepper biscuits for dinner.






I think I'm off the hook now. :)

Dinner Disaster

Since snow was in the forecast for today, I decided to make a nice, comforting meal for Cole. I was looking forward to making it and staying warm in our house.

But, you know what they say about the best laid plans...

I was trying to do a few too many things at once, and I burned dinner. It was really sad. Thankfully, I hadn't made all of it yet, so some of it can be salvaged to use for dinner tomorrow night. But it was still really upsetting. I fussed in the kitchen for a little bit, and a tear or two may have been shed. Cole consoled me and offered to get whatever I wanted for dinner. We ended up ordering Chinese, and it was delicious. It almost made me forget about the meal that just wasn't in the cards tonight.

I'll try again tomorrow night.

Decisions, decisions...

If you know me well at all, you know that I HATE making decisions. And the most dreaded decision of each and every day is what to make for dinner. For a about a month, I was super adventurous and spent a lot of time looking for new recipes to try each night. Lately, though, I've been relying heavily on my old standbys.

My one bright spot in kitchen over the last couple of weeks was making my first roasted chicken. I found the recipe in one of our cookbooks by the Lee Brothers. The end result was a really juicy, flavorful chicken and tasty veggies underneath. And it was easy (the worst part, by far, was handling the whole, raw chicken...yuck!).

So, this morning I'm working on my plan for this week, and once again I'm having a hard time getting inspired. Does anyone out there have any good recipes you want to share??

Whoa...

So, I totally missed the "It's February Now" memo. It is 3:00 p.m. Monday, and I just realized that today is the first day of February. Where have I been?

Sorry I've been a little MIA from the blogging world lately. I actually have several half-written posts waiting to be finished, but clearly I haven't done that yet. Perhaps instead of a New Year's resolution, I'll make a new month resolution - blog more in the month of February. I'm going to do my best to blog at least once a week, but hopefully twice or more a week.

I promise the next post will be more interesting than this one. :)
